Sweet Potato Fries with Avocado Dip

Like many, we have leftover ingredients from our Thanksgiving Meal that need to be used up! I am over run with Sweet Potatoes. This weeks healthy yet delicious savory snack is Sweet Potato Fries served with and Avocado Dip. These sweet potato fries are so simple and quick to make for an afternoon snack or as a side for your dinner. This avocado dip not only pairs well with these fries, but would also taste great with crackers, veggies, and more. Thanks to Del's Cooking Twist for this great treat! for this great treat!

INGREDIENTS.

SWEET POTATO FRIES:

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & black pepper

AVOCADO DIP:

  • ¼ cup plain yogurt
  • 1 ripe avocado
  • 1 tbsp fresh lemon juice
  • 2 garlic cloves, crushed
  • Fresh cilantro, cut
  • Salt & pepper

DIRECTIONS.

  1. Preheat the oven to 400ºF. Line a baking tray with parchment paper.
  2. Cut the sweet potatoes into sticks, about ¼ to ½ inch wide.
  3. Toss them with olive oil in a large mixing bowl. Add the spices, garlic, salt and pepper and toss well.
  4. Transfer the sweet potatoes onto the prepared baking sheet.
  5. Bake until brown and crisp on the bottom, about 10-15 minutes, then filp and bake until the other side is crisp, about 10 minutes.
  6. In the meantime, prepare the avocado dip: in a food processor, mix the garlic cloves until minced. Add the ripe avocado, yogurt, fresh lemon juice, and mix until smooth texture. Season with salt and pepper, and add cilantro on top.
  7. Enjoy the sweet potato fries with the avocado dip.
